It's . Mo lay. Most tamales are m are from pork, frequently the head, but can have Beans, jalapeno spiced filling beef and . Even fruit and nuts. When served with Chile or mole the husks should be removed before adding any sauce.
That's the way all the little old Mexican ladies I know make and serve them.

Here's a pic of some tamales with a side of mole (not sure if it's pronounced mole or molay or moley. though likely not moley.) I have yet to see tamales tied up like this, and they're sometimes covered in sauce before you get them, which makes discerning the wrapper much more difficult.

It is my experience that the best tamales are the ones that have been cooked with the goat head included, though one wouldn't make a sammich with bones in, leastways nobody I know, so good on your friend for warnin ya before hand.

Tamales are made of a corn floor mash shell with a variety of goodies inside. The are wrapped in corn husks and steamed to cook the shell. You have to take off the husk to eat them.
I eat pizza with a fork and to make matters worse I have no idea what people are talking about with this tamale husk business. Must be a Southwest thing. Up here in Michigan the Mexicans go to Ole Taco like everybody else.
I did have a close call with a goat roti once - luckily my Caribbean-background friend warned me before I chomped down real hard and broke my tooth on a goat bone. The logic of leaving bones in a sandwich escapes me, but they taste damn good I have to admit.
