Even if I did that, gold is not legal tender. I'd still have to convert it back into worthless fiat if I actually want to use it. And then we get back to the problem of inflation.
Your logic doesn't make sense. If you bought an ounce of gold for $1000 and convert it back to dollars at $1600 you have protected yourself from inflation.
